Beet greens rock

One of my favorite things about spring is the return of the local farmer's market. I sauté beet greens in olive oil and soy sauce, sometimes adding tofu dredged in corn starch then lightly fried. So. Good.

I don't know what beet greens are...what do they taste like?

If you ever buy fresh beets, it's the part you probably cut off and throw away. At least that's what I always did on the rare occasion I bought beets.

They're incredibly good. The flavor is kind of like a less-bitter chard, and they work well with savory flavors like bacon, garlic, and goat cheese. ... Wow, that all sounds great together. I should try that next!

I love beet greens too. I used to eat them several times a week when I lived on the East Coast. Can't even find them here unless they are attached to the beets.

The beet root is an essential part of red flannel hash. Also, beet juice is an aphrodesiac. Misuse this information at your peril, by which I mean you will end up looking like a beet DOWN THERE.

Yum. We have so many beets growing the garden right now. We eat the beet greens pretty often with bacon and vinegar.. yum..

Mmm... I love beet greens. They are so much sweeter than most greens.

Our market hasn't started just yet, but it will very soon. Can't wait!

Do beet greens need to be eaten when they are young and tender? Or can you eat the grees that are connected to the beets you can buy at the farmer's market?

Yes, you just cut the greens off, wash them well, and cook them until they're soft. I had been throwing them away for the longest time before I found a random recipe that called for them. Crazy good.

I swear, you have to be careful with them, looking at monkerotica's comment reminded me about a time when I ate tooo many beets.... The next (ahem) morning in the loo.. I seriously thought I was dying.. HA!
